@Metsada007 Fresh spinach is great for salads, but when cooked, it shrinks down to nothing. A whole bag of fresh spinach will shrink down to approx 1 tbspn of cooked spinach. Feel free to ask me how I know this (laughs).

Wouldn’t the dairy be more stable (less prone to break and separate) if you first wilted FRESH spinach over the onions, drained excess moisture from it nd then folded it into a classic bechemel (hence the nutmeg) which becomes a morney with the addition of the cream cheese?

I don’t get why this recipe is so hard to find on the website… a search for “creamed spinach” only leads to a picture of the spinach dish and no recipe at all.

Hi Keith Great recipe. I would add some sauteed garlic and put the finished spinach in an aux gratin dish, sprinkle with grated parmesan and bake til bubbly…but this is a good base recipe. Love your French range…..oooh lala
