Spaghetti Carbonara, Original Italian recipe.

@illuminati503 try without cream, and if you don’t like the result, add some cream (i wouldn’t), the real recipe : while the pasta is cooking, fry some pancetta (cut into cubes or small strips) (or bacon if you cannot find pancetta), let it cool a little, mix 2 whole eggs, + one egg yolk with a big handful of parmesan, some salt (a pinch, the bacon is very salty), and a lot of pepper, when the Pasta is al dente, let it cool in the colander for about one minute, mix it with the eggs + bacon.

@illuminati503 it’s not just a question of being “better” or not, if you call it carbonara, it’s without cream, if you add cream, call it carbonara with cream., the taste of the almost raw eggs, in combination with the salty bacon is what makes it a carbonara, adding cream only dilutes this taste. but it makes it easier to make. to obtain some creaminess without any cream you need the mix the pasta and the eggs at the right temperature, and use the right amount of cooking water.
