Actually, u can just look at the side of the salmon. When it’s cooking, it will be white from bottom to top. So depending on the thickness of ur salmon, the time taken for the salmon to turn “white” varies.

I dont know how long he cooked it, but you want the salmon to become translucent. I would suggest that you sear the salmon flesh side down form the crust then pop it in the oven (in a castiron skillet (like a Lodge) and cook it for 8 minutes. Let the salmon while you prepare the sauce.
