You should be able to get fructose in large supermarkets, if not possibly a health store. Looks and tastes just like sugar but is better for people with high blood sugar as it absorbs much slower.

the lemon peel.

Gee, I’m American and I’ve never seen or tasted ANY Flan or Creme Caramel recipe that produced toffee or fudge, as the topping. Just saying…..and I just knew those arms couldn’t go with that beautifully soothing voice but then you never know!!

Hi! no, it’s not bitter. It contrasts quite well with the sweet. You can also leave the caramel on the heat less time so it’s lighter.

I really like your recipe. I did a few modifications to hit my taste though
I uses a little bit of lemon juice instead of vinegar and I didn’t let the caramel go too dark because I don’t like it when it gets too bitter. I wait until it gets an amber color and take it from the heat to get an bitter-sweet flavor <3

Hi, Thanks for the comment. The vinegar helps to stop the caramel from hardening too quickly or you wouldn’t be able to pour it in the moulds. I’m not sure if lemom juice would work, I must give it a try!

I was looking for caramel recipe yesterday and watched at least a dozen videos, alas they were all American producing what I would call toffee or fudge rather than caramel.

You used lemon peels – does lemon juice do the tric instead of vinegar?

It gas holes so I don’t think It would be delicous and the caramel is too dark it’s probably bitter

I failed… I tried to make this for my Mom. I used fructose because she’s a Diabetic, but i put in too much vinager… Luckily i made two portions of it without the caramel, and she kinda liked it:)
