				<content:encoded><![CDATA[<p>Growing up, one of my favorite popsicles definitely had to be the orange creamsicle.  So creamy on the inside, yet tart and refreshing on the outside.  Little did I know all of the ingredients inside one of those bad boys.  The great thing about making your own popsicles at home is there is very few ingredients and you can really limit the sugar!  When we were at the grocery store today, my 4 year-old was begging me to buy a popsicle.  I relented and bought &#8216;Juice Pops&#8217; because that is what she really wanted.  When we got home and she had one, I tasted it just to see what it was like and I was surprised how sweet it was.  Chuck full of sugar.  Well, this is what is really in orange creamsicles when you buy them at the store vs. our homemade version.  </p>

<p>Our creamsicles are simple, refreshing, nutritious and definitely bring back the nostalgia of eating them when you were a kid.  </p>

<p>The key to making a real creamsicle is the Zoku Pop Maker.  It probably seems like I am always talking about the Zoku, and that is because I am!  It is honestly one of my favorite kitchen gadgets.  If your kids like popsicles then this is a must have.  Instead of waiting a few hours for your pops to freeze, the Zoku literally makes the pops in 7 minutes.  So great when you have little kidlets waiting not-so-patiently for a popsicle.  This is how it works:</p>
<p><strong>1</strong> -<em> </em>Put the Zoku unit in the freezer for 24 hours, or you can store it there so you’re always ready to make the quick pops. (That is what I do)</p>
<p><strong>2 – </strong>Place the reusable pop sticks in the mold, and then pour in your choice of juice, smoothie, mashed fruit – whatever you want!  And wait…only 7 minutes! Place the unit right on your counter-top while you wait.</p>
<p><strong>3 – </strong>Use the specially designed Super Tool to release your pops.</p>
<p><strong>4 – </strong>ENJOY!</p>

<p><span><strong>Orange Creamsicles</strong></span></p>
<p><span><strong><br/></strong></span>We started with fresh squeezed orange juice.  If you don&#8217;t have time, or are making a lot of pops, or just don&#8217;t feel like squeezing oranges &#8211; then by all means use 100% orange juice.  Depending how many pops you are making at a time &#8211; you will need about 6 ounces of orange juice.  I used 3 large navel oranges and got about 6 ounces.  </p>

<p>This is where the Zoku&#8217;s magic comes in.  Pour the juice into the molds.  You will then wait about 3 minutes.  </p>

<p>After about 3-4 minutes, the outside will have frozen but the center will still be liquid.  You will then use the Siphon tool to suck out the center of the pops.  </p>

<p>For our creamy center I blended Greek yogurt, 1/4 of a banana, and a little milk.  The banana was to add sweetness, but you could also use honey, your favorite sweetener or nothing at all.  You could also add a little pure vanilla extract which would be delicious.   Pour this mixture into the center of your mold.  </p>

<p>Wait about 4-5 more minutes and you will have a delectable orange creamsicle.  Now, if you don&#8217;t have a Zoku&#8230;&#8230;&#8230;..you should get one.  Ha &#8211; just kidding.  You can still make this recipe!  Just blend your creamy center together with the orange juice and pour it into your mold.  It will just be a blended orange creamsicle and is still just as delicious.  Just not as legit or nostalgic.  :)</p>

<p>I love that if I have leftover smoothie from breakfast, I can pour it into my zoku and have pops in 7 minutes.  I love that you don&#8217;t have to clean the molds every time you use it.  I love that I don&#8217;t have to buy sugary popsicles for my kids because I can make so many different kinds and so fast! </p>

<p><span class="c12">Steam</span> asparagus crisp and tender, about 3 to 4 minutes. Thinly <span class="c12">slice</span> on the diagonal into 1/2-inch pieces.</p>
<p><span class="c12">Preheat</span> oven to 350°F.<br/><span class="c12"><br/>Heat</span> butter in a 10-inch oven safe skillet over medium heat. <span class="c12">Stir</span> in shallots and saute until golden, about 4-5 minutes. <span class="c12">Add</span> steamed asparagus, salt and pepper.</p>
<p>In a medium bowl <span class="c12">whisk</span> eggs, egg whites, grated cheese, milk, salt, and pepper. <span class="c12">Add</span> the swiss cheese and <span class="c12">mix</span> well.<br/><span class="c12"><br/>Add</span> eggs to the skillet making sure eggs cover the asparagus. <span class="c12">Cook</span> on medium for about 4 minutes, until the edges begin to set<span class="c12">. Move</span> the skillet to oven. <span class="c12">Cook</span> about 16 to 18 minutes, or until frittata is completely cooked. <span class="c12">Serve hot</span>, cut into 4 to 6 equal wedges. </p>

<p itemprop="articleBody">1 recipe Whole-Wheat Focaccia</p>
<p itemprop="articleBody">1 pound cauliflower (1 small head or 1/2 large), cut into florets, stems trimmed</p>
<p itemprop="articleBody">Salt and freshly ground pepper to taste</p>
<p itemprop="articleBody">2 tablespoons extra virgin olive oil</p>
<p itemprop="articleBody">30 to 40 fresh sage leaves (depending on the size)</p>
<p itemprop="articleBody"><strong>1.</strong> Mix up the focaccia dough as directed and set in a warm spot to rise.</p>
<p itemprop="articleBody"><strong>2.</strong> Meanwhile, bring a large pot of water to a boil and salt generously. Add the cauliflower and blanch for 2 minutes. Transfer to a bowl of cold water, then drain and pat dry. Cut the florets into small pieces and toss in a large bowl with 2 tablespoons olive oil and salt and freshly ground pepper.</p>
<p itemprop="articleBody"><strong>3.</strong> When the focaccia dough has risen, shape as directed into 1 large focaccia or 2 smaller focacce. Cover with a damp cloth and let rise in a warm spot for 30 minutes while you preheat the oven to 425 degrees, preferably with a baking stone in it.</p>
<p itemprop="articleBody"><strong>4.</strong> Dimple the dough with your fingertips and arrange the sage leaves, then the cauliflower on top. Drizzle with olive oil. Bake, setting the pan on top of the baking stone (if using), for 25 minutes, until the bread is deep golden brown and the cauliflower lightly colored in spots. Let rest for at least 10 minutes before serving, or allow to cool completely.</p>
<p itemprop="articleBody"><strong>Yield:</strong> 1 large focaccia or 2 smaller focacce, 12 to 15 servings</p>
<p itemprop="articleBody"><strong>Advance preparation:</strong> The blanched cauliflower will keep in the refrigerator for 3 days. You can make the dough and place it in a plastic bag in the refrigerator for up to 2 days. Remove from the bag and bring to room temperature before proceeding. The bread should be eaten or frozen within a couple of days.</p>
<p itemprop="articleBody"><strong>Variation:</strong> Add 2 to 3 ounces (1/2 to 3/4 cup) Gorgonzola or 1 to 2 ounces freshly grated Parmesan. Bake the focaccia without the cheese for 15 minutes, then sprinkle on the cheese and bake another 10 minutes.</p>

				<content:encoded><![CDATA[<p>Homemade pancakes are so delicious&#8230;&#8230;especially when you can whip them up in 2 minutes!  Buying a whole-wheat pancake mix can be expensive and full of ingredients that you might not want to feed your kids.  This pancake mix is definitely a keeper.  You can make a big batch and then when you want to make fresh, hot pancakes it will only take you a few minutes.  Even those mornings when you don&#8217;t have a lot of time, you can still make these pancakes for your kids.</p>

<p>Put all of your ingredients in a big bowl.  Mix together with a whisk.  You can use all whole wheat if you want, or even try other whole grain flours.  </p>

<p>Place in an airtight container.  You can store this for up to 3 months.  I write the ingredients to make a batch on the container and then you have it right there when you want to make them.  </p>

<p>Then when you are ready to whip up a delicious batch of these all you do is add:</p>
<ul>
<li>1 1/2 cups mix</li>

<li>1 cup water</li>
<p>&#13;
<li>2 Tbsp Canola oil</li>
<p>&#13;
<li>1 egg</li>
<p>&#13; </ul>
<p>This will make about 6-8 pancakes (smaller size).  If you like thicker pancakes, add up to 1/4 cup more mix to your batter.  These pancakes are seriously the best I have ever made from scratch.  They are super fluffy and full of flavor.   And these pancakes freeze beautifully once they are made.  Then if you are really in a rush, you can pull them out and pop them in the toaster for a breakfast on the go!</p>

<p>I love the combination of the sweet, juicy oranges mixed with the peppery arugula and the pungent taste of the creamy Gorgonzola cheese, they work together harmoniously. My husband doesn&#8217;t agree; he is not a fan of Gorgonzola at all so I usually make this for myself for lunch. If you want to make this for two or four, just multiply the ingredients. If you&#8217;re like my husband and don&#8217;t care for Gorgonzola, you could use goat cheese or feta instead.</p>

<p><br/> Directions:<br/><strong>Take</strong> 2 sections of the orange and squeeze into a small bowl, <strong>whisk</strong> in the balsamic, oil, honey, salt and pepper.
<p><strong>Cut</strong> the remaining orange sections into bite sized pieces.</p>
<p><strong>Place</strong> the baby greens on a plate, then top with cut orange pieces, sliced red onion and Gorgonzola cheese. <strong>Drizzle</strong> the vinaigrette over the top and enjoy!! </p>

<p>While at the Palo Alto California Avenue farmer’s market today, I picked up a tamale from The Oaxacan Kitchen booth. That was the extent of my Cinco de Mayo activity for the day. It’s not much compared to whipping up a tableful of Mexican dishes or hanging out at a party, but it sure was tasty.</p>
<p>There’s only one vegan tamale, the Roasted Butternut Squash – Fresh corn, guaillo salsa, big chunks of butternut squash and zucchini. Really good flavor. Available mild, spicy or extra spicy. I got the middle spice level, spicy but not mouth-on-fire kind of spicy (at least for me), $  4.00 for one.</p>

<p>I haven’t tried anything else there but while waiting for my food, I spotted the lady making corn tortillas to order. She would grab a bit of the dough from a giant pile, flatten it out in a large hand press and then cooked it up. Man, she was fast.</p>
<p>And all this in basically the middle of the street (a section is closed down for the farmer’s market). Next time, I going to have to try to get something that has those handmade tortillas.</p>

<p>WEDNESDAY, May 15 (HealthDay News) &#8212; Weight gain in men and women is predicted by two different genetic variations &#8212; so-called polymorphisms, according to a new study from the Netherlands.</p>
<p>Men with a certain mutation of the FTO gene had an 87 percent greater risk for gaining weight over 10 years. Meanwhile, women with a different variation on the MMP2 gene had a two and a half times increased risk for weight gain over the course of a decade, the researchers found.</p>
<p>The research involved two groups of people: The first group, which consisted of 259 people, maintained a stable weight; the second group consisted of 237 people who were considered weight gainers. These participants gained about 17 pounds over 10 years.</p>
<p>Starting body-mass index &#8212; a measurement of body fat based on a person&#8217;s ratio of height to weight &#8212; for the participants ranged from normal to obese. Participants were between 20 and 45 years old when the study began.</p>
<p>The research, led by Freek Bouwman, from Maastricht University, and Dr. Jolanda Boer, from the Netherlands&#8217; National Institute for Public Health and the Environment, focused on several different polymorphisms associated with weight gain in previous studies.</p>
<p>The genetic distribution of a particular FTO polymorphism in men was consistently different between the weight-stable group and the weigh-gainer group, the study revealed, according to a news release from the European Congress on Obesity.</p>
<p>Similarly, among the women, the genetic distribution of the MMP2 polymorphism varied between those considered weight stable and those in the weight-gainer group.</p>
<p>&#8220;We found that FTO in men and MMP2 in women are predictors for weight gain over a 10-year follow-up period,&#8221; the study authors wrote.</p>
<p>They suggested that more research into these polymorphisms could help determine who is at greatest risk for weight gain and improve weight-control strategies. They said differences in male and female hormone levels also could play a role in weight regulation.</p>
<p>The study was presented Tuesday at the European Congress on Obesity in Liverpool, England. Findings presented at medical meetings should be viewed as preliminary until published in a peer-reviewed journal.</p>

<p> <br/> If you&#8217;ve never tried chia pudding, I highly recommend picking up some chia seeds and <strong>Blue Diamond Almond Breeze</strong> almond milk and give it a try.
