You really need to use fresh spinach for these muffins b/c frozen spinach has too much water and would change the consistency (and color of them).

I’ve just put mine in the oven I have done a gluten free version and without sugar so I hope they will be ok thanks for recipe

I know it sounds odd, but they’re really good! They taste like sweet muffins, not like spinach the way you would think they would.
