the first time i heard of spinach pie i thought “that sounds disgusting” even though i love spinach, but ill try anything once so i did and it was amazing. but i was wondering, do you suppose it would be good with jalepenos? i really like spicy food and like to experiment with things like that.

This recipe turns out REALLY good. I also found it freezes very well, but you can’t reheat in the microwave, you have to bake in the oven. Just as good as the first day! I always wondered what that slightly sour taste in mediterreanean spinach pies was — now I know it’s the sumac. Thanks Dede!

Hi again… well, I made them again, this time around, I measured the amount of filling I made – which came out to about 30 Tablespoons. So, I divided the dough accordingly. This time, they were much better looking and even more delicious! My husband has a Lebanese woman who comes into where he works – she’s a caterer. She brings him Spinach pies in all the time. My husband says that these pies are just as good, if not better, and this woman’s pies are delicious too! Thanks so much!
