What to use instead of cumin and ginger? Any suggestion?

Sure, you can leave it out. It does add some flavor but if you don’t like it, you won’t miss it .
Would it affect the dish too much if I left out the fennel seed??? I love everything else about this dish, just not a huge fan of fennel

I’ve been experimenting with Indian vegetables and recently tried an Indian vegetable whose taste reminded me of asparagus: drumstick. It was very tasty, like asparagus. However, going into it blindly, I didn’t realize there is a tough stick-like skeleton to the vegetable, and people usually scrape the soft flesh with their teeth. This is not necessary with asparagus.
What an easy, fast, healthy dish – thanks! I look forward to trying it out soon.
