I just loved the thick sauce from the coconut milk. There is nothing compared to it. Basically, ginataang hipon is just some shrimp boiled in coconut milk, added with some vegetables. It is also best with squash. I just did not have the squash when I made this recipe because it was not available when we went shopping. This Filipino recipe is also very healthy and you can eat this however much you want and without guilt. The only problem with this is that the shrimp is really expensive. We couldn’t even eat this as much as I wanted even when I was still in the Philippines. When I cooked this for Nunnie, he said it was really really good. His only problem with this Pinoy recipe is that I did not take the peel off of the shrimp. That was because in the Philippines, we really do not take off the head and shell of the shrimp. But as you know, Nunnie is just too lazy to take the shell off. So I ended up peeling it for him. It was a little messy, but we, Filipinos, love to eat with our bare hands, so I did not mind. Ginataang hipon is also a very flexible Pinoy recipe. You can even add green chili peppers to add some heat if you want. But I would never do that because the flavor is already perfect for my taste.
