I hate to say it, but I’ve grown a little tired of quinoa lately. While it will always be one of my favorite grains/seeds (it has that split personality thing going on), lately I’ve been craving something more sturdy and robust, a grain that can stand up next to all the flavorful summer produce and say “Bite me! Chew me! I’m not just hiding in the background to soak up all the salad dressing!” This week, at least, my heart belongs to an assertive little grain called farro.
The Italians often fry the eggplant for this simple dish. Grilled eggplant works even better. This versatile recipe goes well with grilled meats, tossed with pasta or part of an antipasto. You can adjust the red pepper flakes in this eggplant dish, taking it anywhere from mild to spicy hot, according to your liking.
Sorry for the lack of photos today- Sometimes, although it tastes amazing, I can not get meat to look good. But don’t let that stop you from making this no-stress, no-mess, healthy dinner! Of course, we like to stack our stir fry : Rice, then veggies, then the meat. But if your kids are like one of mine they do not like their dinner portions to touch. Fine by us! Separate or together, still a fabulous dinner.
